Here is a best guide along with tools to get it working
I was able to get Leopard 10.5 working and then updated on a vanilla kernel and then OSX server installed. There is no support for ESX(i) and Snow Leopard yet, but this is the best next thing. Enjoy.

Leopard Fully working on VMWARE ESX(i) 4 and Workstation
