I was finally able to run MAC OSX 10.5.6 on ESXi server using Xelabos 10.5.5 VMWare image which can be found in usual places, think green :). After using the Converter Standalone Client you have to delete the existing network card and add E1000 card. Everything should work. To install iPhoto 09 and Safari 4:
If you don’t have 10.5.6 and you don’t want to upgrade do this :
Go to /system/library/coreservice/SystemVersion.plist Edit this files :
ProductBuild
Version 9E17
ProductCopyright
1983-2008 Apple Inc.
ProductName
Mac OS X
ProductUserVisibleVersion
10.5.6
ProductVersion
10.5.6
after that install Security Update 2009-001
and after

There is a way to have OSX Server running, I was only able to install up to 10.5.4 Version, but there is an image floating around with 10.5.6 install of OSX Server.
